This is because when one consumes alcohol, it passes through to the liver, where it is detoxified to avoid toxins entering the bloodstream. The liver detoxifies alcohol through the use of peroxisomes and smooth ER. The more alcohol you drink, the more peroxisomes and smooth ER will be needed in order to process the alcohol in the liver. However, this is not a perfect solution -- if one drinks to excess, eventually, the liver will no longer be able to keep up with detoxifying the amount of alcohol you consume, and liver cells will slowly be destroyed. This may later lead to the build-up of scar tissue and the eventual failure of the liver.
